Risotto with sun dried tomatoes

Hi all,

Finally i prepared another easy made recipe for you to try it out. Its quite easy and i would say healthy, so lets dig in

Ingredients:

500g of risotto rice
1 Jar of sun dried tomatoes in oil.
1 big onion
2 big cloves of garlic
20 - 50 g of butter
2 cubes of broth, preferably chicken broth
Glass of white wine
Salt and freshly ground pepper
and parmigiano for sprinkling on top


so lets start our experiment. Chop Onion and garlic in very tiny peaces:

Then prepare stock, put 2 cubes of broth to a large pot and add around 1.5 l of boiling water, mix it well and leave it to cool.
Take 20 g of butter and melt it in a big pan, add chopped onion and cook it till its golden and add garlic.
When its all smelling nice and tender you need to add rice and toast it a bit with all that onion garlic and butter goodness:
To toast off rice you need around 5 to 7 minutes, depending on heath of the stove, the toasting is needed to keep the firmness of the rice when it will be cooked off. When the toasting is done, we add a glass of white wine, to give that nice acidity to rice, cook rice in wine till its almost absorbed:
Then we start adding stock in, a ladle at a time not to have too much liquid but also be careful and don't over dry it

while the rice is nicely cooking, you need to chop up some sun dried tomatoes, chop them not as small as onion but don't leave too big peaces, tomato flavor needs to go into the dish. When the rice is almost done you need to add chopped up tomatoes and finish cooking. The rice is done when all gluten is worked up from all the stirring while cooking, rice grain is soft but still keeps its firm shape and has a slight bite to it. When its all done, season it well with freshly ground pepper and a bit of parmigiano:

And there it is, your first risotto, simple, incredibly tasty and pretty dish :) abit of love and care can make magic with dishes!
